I wanted to find a way to use leftover mashed potatoes from Christmas dinner. I decided to try this recipe from Judy Taubert on Allrecipes.com:
Potato Bread III
1 potato, peeled and diced
1 1/2 cups water
2 packages active dry yeast, .25 ounce each
6 1/2 cups all purpose flour
3 tablespoons white sugar
2 tablespoons shortening
1 tablespoon salt
2 tablespoons all purpose flour
I changed it slightly. I used butter, melted and cooled, in place of shortening. I didn't dust the bread with flour before baking. I used 4 mini loaf pans instead of 2 8" loaf pans
Here's the result. Yum.
